The Story Behind The Strawberry Rhubarb Mezcal Margarita

It’s hard to improve on a quality Margarita, but mezcal, fresh mint, and homemade strawberry-rhubarb syrup certainly don't hurt! Sometimes, simple syrups made with fresh berries can be cloying, so try balancing yours with a splash of Aperol. It deepens the color of the drink, too.

Ingredients

  • 2 ounces mezcal
  • ½ ounce Aperol
  • ½ ounce fresh lime juice
  • ½ ounce fresh lemon juice
  • ¾ ounce strawberry-rhubarb syrup (recipe follows)
  • Pinch of sea salt
  • Fresh mint
  • Lime wheel and strawberry, for garnish (optional)

Directions

  1. Add 4 or 5 large mint leaves to the bottom of a cocktail shaker tin, and gently muddle with the strawberry-rhubarb syrup.
  2. Add the rest of the ingredients, ice, and shake to combine.
  3. Double-strain into a rocks glass over fresh ice.
  4. Garnish with a healthy of sprig of mint, lime wheel, and a skewered strawberry.

Strawberry-Rhubarb Syrup Ingredients

  • 1½ cups chopped strawberries
  • 1½ cups chopped rhubarb
  • 2 cups water
  • 2 cups cane sugar

Strawberry-Rhubarb Syrup Directions

  1. In a saucepan, combine strawberries, rhubarb, sugar, and water. Bring to a boil over medium heat, stirring occasionally.
  2. Once the mixture boils, remove from heat, cover, and set aside to steep for at least 45 minutes.
  3. Strain into a resealable container, discarding solids, and store, covered, in your refrigerator. (You can also add a teaspoon of vodka to help extend the shelf life.)
