This stunning, agave-based cocktail is the creation of Portland beverage professional Beau Raymond. A bit more elaborate than your traditional sour, the drink delicately balances mezcal, tequila, and sloe gin. It has a velvety smooth texture and a subtle peppery spice from the Aleppo tincture that plays well with the various citrus flavors.
Ingredients
1 ounce mezcal
½ ounce blanco tequila
½ ounce sloe gin
¾ ounce fresh lime juice
½ ounce agave syrup
¾ ounce oleo saccharum
5 drops Aleppo tincture
3 drops saline
5 dashes grapefruit bitters
1 egg white
Directions
Combine all ingredients except for egg white in a cocktail shaker over ice.
Shake to combine.
Remove the ice and add egg white to shaker, and then shake again. (This technique is called “reverse dry-shake.”)
Double-strain into a chilled cocktail glass and garnish with grapefruit peel and some spicy chili salt.
