The Story Behind The Mango & Mint Spiked Lemonade

During these hot summer days, many of us want to travel somewhere tropical to relax in the sun. Unfortunately, there’s no such thing as summer vacation for adults. Luckily, you can feel like you’re traveling somewhere serene by sipping something fruity and boozy. Certain drinks always remind me of my travels. In Mexico, I drank plenty of Mango daiquiris and margaritas, and in Thailand, I had frozen drinks with both mango and passion fruit.

I decided to draw inspiration from these cocktails to create my own take on everyone’s favorite summertime sipper – lemonade! This recipe calls for the addition of mango juice, which adds a tropical flair to any drink. A dash of mint also creates an herbal, earthy zest. There really is something about mango that makes you feel like you’re at the beach. The fruit’s sweetness balances the citrus tang of the lemonade, while the mint refreshes your palate. If you’re throwing a beach party or a luau, this drink can easily be made into a punch. Add festive and fun garnishes like paper umbrellas or tropical cocktail straws, and you have yourself an instant party!

While I can’t catch a plane at the moment, this Mango & Mint Spiked Lemonade makes me feel like I’m lying out on a Mexican beach, far away from my home here in Seattle.
