The Story Behind The Double Lemon Gimlet

Sometimes I get fixated on things and want to use them in everything. I recently had some leftover lemon curd from baking a layer cake (yes, I bake!), and so I really wanted to make a cocktail with it.

The best part was that I pretty much replicated the flavor profile of the cake. The lemon curd has a wonderful creamy texture. When you use a quality brand it can be deliciously tart, so you still need to add a little extra sugar to balance the cocktail, which was perfect because this allowed me to put in a little bit of vanilla. You can now have your cake and drink it, too!

Ingredients

  • 1 ½ ounces gin
  • 1 ounce lemon juice
  • ½ ounce vanilla syrup, preferably Monin
  • 1 bar spoon lemon curd

Directions

  1. Combine all ingredients in a cocktail shaker with ice.
  2. Shake hard to chill and combine.
  3. Fine strain into a cocktail glass.
