The ‘Cuvée Pau’ name is a sly allusion to Pauillac, an area of Bordeaux where Cabernet Sauvignon is the primary grape. At 68% Cabernet Sauvignon and the remainder a blend of Malbec, Petit Verdot, and Merlot, this powerful California wine is a bolder, fruitier version of its French counterpart. Aromas include black currants, blueberries, and toasted oak. It's very fruit-forward but still a little tight, and might improve even more in 5 years.
