Take a sip of this wine right after you open it. Then sip again in 10 minutes. After that, you’ll go back to it again and again and understand the groove of enjoying a wine as it opens up. This one is quite shy at first, with tannins all up in your teeth. But as it breathes, fruit amplifies and the dry tannins start to soften. This wine is great for rich meat dishes and pasta. You could even buy a few bottles, lay them down, and watch them evolve over two or three years.
