Not all Prosecco are made alike, especially in the DOCG of Valdobbiadene, with it's over 40 crus whose names winemakers can attach to their labels distinguishing these higher-end Proseccos from one another (this one hails from the hamlet of Colbertaldo). This is very concentrated Prosecco, with persistent bubbles and bright fruit notes of peach and pear and a soft undertone of acacia honey. This is a sparkler with some depth and weight due to just the right amount of sweetness, making for a perfect pairing with Asian foods or any salad you can rustle up.
