Unlike automatic brewers, or laissez-faire French presses, pour-over coffee is a labor of love. The process isn’t difficult, exactly, but it requires patience and precision.
You’ll need a scale, which many home cooks don’t have or use all that often. Fortunately, simple versions start at $10. You’ll want to keep your eye on the clock, too — you can’t just dump your beans into the filter and wander away to water the plants or scroll Twitter.
“Instead of flooding the filter and letting it drip, you deliver a measured amount of water over a period of several minutes,” Oliver Strand wrote in The New York Times. “It might sound precious or tedious, but the control is enthralling.”
